Cacao chaga berry bites

Cacao and berries are a match made in heaven. These delicious cacao chaga berry bites are a healthy alternative to that 3pm sugar craving. Raw cacao is rich in antioxidants, magnesium and iron while chaga is a powerful adaptogen with a dense source of vitamin B. 

Cacao chaga berry bites

Ingredients

1/2 cup cocoa butter

1 tbsp raw cacao powder

1 tsp Chaga Mushroom Powder

1 pinch Himalayan salt

4 Medjool dates (soaked for 1-2 hours)

1 tbsp peanut butter or other nut butter

1 tbsp coconut oil

1 tbsp milk or plant-milk

1 tsp chia seeds

1/2 cup raspberries

2-5 tsp hot water

 

Method

Soak dates in water for 1-2 hours to make them soft and tender.

Make raspberry 'jam' by mixing raspberries and chia seeds with a few teaspoons of hot water, mix and let stand for 10 minutes.

Melt the cocoa butter, and when it becomes liquid, mix it with the cacao powder, Himalayan sea salt, Chaga mushroom powder and coconut oil.

Pour half of the mixture into moulds (silicone muffin moulds will work) and place in the freezer for 15 minutes.

While that sets, use a blender to mix the pitted dates and peanut butter until it turns creamy in texture, then add in milk of choice and blend again.
Remove mixture from freezer and add a dollop of peanut butter mix into each mould. Put a spoonful of chia raspberry jam on top of peanut butter and pour the remaining chocolate mix on top making sure raspberries are well covered.
Place in the freezer for 15-20 minutes and store for up to 1 week in the fridge or 10 days in the freezer.
