Simple fresh fig salad

We share a simple salad of fresh figs, feta, herbs and edible chamomile flowers by FoodByMaria

We love eating seasonally and figs are currently available in your local supermarket/grocer or farmers market until mid-Autumn. They're not only sweetly delicious but packed full of potassium, calcium, iron and vitamins A and K - making them a potent antioxidant. 

Fresh Fig Salad

Ingredients

10 large figs, halved

2 tbsp. olive oil

Juice of half a lemon

1 large handful fresh parsley, very finely chopped

1/4 cup vegan or regular feta

1/4 cup chopped walnuts

1/2 tsp sea salt

1/4 tsp fresh cracked pepper

Handful of edible chamomile flowers

 

Method

To assemble the salad, simply add the halved figs to a large plate and begin adding the walnuts, feta and parsley.

Drizzle on the oil, lemon and seasoning and enjoy.
